Simple foolproof cookies

I'm not an experienced baker, and I have just started baking cookies! Have made two kinds so far: 'drop' cookies, with oatmeal and nothing else coz that's the way I like them, and cut-out cookies with some biscuit cutters I bought a long time ago and still hadn't used! They're so easy to make and so yum... I ate all of the drop cookies within 2 days (causing a major tummy problem), and I think the cut-out cookies (which I just made today) will all be consumed by tomorrow...


Chewy oatmeal cookies 


(I found this recipe online and modified it quite a bit!)





200g butter, softened
100g brown sugar
50g white sugar
2 eggs
1 3/4 cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon salt
3.5 cups quick-cooking oats
1 cup chopped walnuts (optional)

Directions
1.   Preheat the oven to 165 degrees C.
2.  Cream the butter, brown sugar, and white sugar until smooth. Beat in eggs one at a time, then stir in vanilla. Combine the flour, baking soda, and salt; stir into the creamed mixture until just blended. Mix in the oats, walnuts (optional). Drop by heaping spoonfuls onto ungreased baking sheets.
3.   Bake for 10-12 minutes in the preheated oven. Shorten the time to achieve a chewy texture. Allow cookies to cool on baking sheet for 5 minutes before transferring to a wire rack to cool completely.
